White Turkey Chili
2 TBSP. olive oil
1 large onion, diced
2 cloves garlic, coarsely chopped
1 1b. ground turkey (may be substituted for ground chicken or chopped chicken breast)
1 lb. turkey breast, cubed
1 tsp. cumin
1 tsp. marjoram
1 bay leaf
3 cans chicken broth
3/4 cub pearl barley
1 can garbanzo beans, rinsed and drained
salt and pepper
Saute onions and garlic on medium heat for about 5 minutes. Add turkey, saute until brown. Add spices and cook for 2 more minutes. Add chicken broth; bring to a boil. Add barley, bring to a boil; simmer and cook for 45 minutes. Add beans; cook 10 more minutes. Remove bay leaf and serve. Serve with reduced fat sour cream and a salad for greens:)
