Mulligatawny Soup (Indian flavor)
Easy, delicious, and healthy!
Ingredients:
Chicken-boiled and cubed
2 stalks celery, chopped
2 carrots, chopped
2 TBSP. olive oil
1 TBSP. flour
3 tsp. curry
4 cups chicken broth
1/2 an apple, chopped (mcintosh-best, but it doesnt matter)
1/4 cup. brown rice
1 tsp. thyme
salt and pepper to taste
1/2 cup milk
1 TBSP. cornstarch
Directions:
Saute onion, celery, and carrots in olive oil. When they are cooked through (about 5 min.), add flour and stir. Immediately add broth, seasoning, chicken, rice, and apple. Bring to a boil, then back to low and simmer for 20 minutes or until rice is cooked through.
Meanwhile, stir milk and cornstarch in a cup.
Add to the soup.
