Turkey Cacciatore Stew

Ingredients
2 tsp. olive oil
2 onions, halved and thinly sliced
3/4 lb. mushrooms, thinly sliced
2 cloves garlic, minced
14 oz. can of stewed tomatoes
8 oz. can of tomato sauce
1/4 cup dry red wine
1/4 cup chopped fresh basil or 1 tsp. dried basil
1/2 tsp. hot pepper sauce
salt to taste
3/4 lb. turkey cutlets, cut into strips (SO easy to cook with!!!)
whole wheat pasta
Directions
Heat a pot of water for the pasta. Meanwhile, heat oil in a sauce pan and cook onions until soft. Add mushrooms and cook for 5 minutes. Add garlic and cook for 1 minute. Add stewed tomatoes, sauce, whine, basil, salt, and hot pepper sauce. Bring to a boil, reduce heat to a simmer and cook for 5 minutes for flavors to blend. Add the turkey strips, stirring to coat with sauce. Cover the pan and cook until the turkey is cooked through, about 5 minutes.
Meanwhile, finish cooking pasta. Serve turkey stew over pasta. Eat and enjoy:)
