Taco Salad
Meat (optional): chicken, fish, beef, beans (vegetarian)-Honestly, this dish doesn't need meat. It you do one vegetarian dish a week, this should be it:)
Lettuce: romaine, coarsely chopped
Guacamole: (1 avocado, 1/2 tomato, 1/4 cup chopped onion, 1/2 of a lime, salt to taste, cilantro, coarsely chopped)
Refried beans: (1 can red beans (rinsed and drained), 1 clove garlic, 1/4 cup chicken broth, salt, other 1/2 tomato)
Tomato, coarsely chopped
Reduced fat cheddar cheese
fat free sour cream
salsa (store bought)
1 tortilla (baked in the oven until light brown and crispy)...no chips!
Make homemade guacamole by blending all the ingredients listed above. Make homemade refried beans by heating beans in a small sauce pan. Add garlic, tomatoes, salt and pepper. Cook for 15 minutes while adding chicken stock a little at a time. When the liquid is soaked up, add a little more.
Plate the lettuce. Add beans, meat, guacamole, tomatoes, and cheese. For dressing, simple add sour cream and a squeeze of lime juice. Or, as my mom likes, combine 1/2 cup sour cream and about 1/4 cup salsa. Mix and use as dressing:)
