Special Bean Soup
2 cans kidney beans (15oz.)
2 Tbsp. Olive oil
1 cup diced carrots
1 cup diced onions
1 cup diced celery
½ lb. ground beef
1 Tbsp. Chopped garlic
1 Tbsp. Adobo all-purpose seasoning
7 cups water
6 beef bouillon cubes
1 (28 oz.) can diced tomatoes, undrained
1 (16 oz.) bag frozen vegetables
1 cup elbow noodles
Salt/Pepper to taste
In a large, heavy pot, sauté` diced vegetables in oil
Over medium heat until golden. Add ground beef and cook, breaking into
½-inch chunks. Add Adobo seasoning and garlic and sauté` 3 minutes.
Add water and bouillon and bring to boil. Simmer about 30 minutes.
Add tomatoes, frozen vegetables and elbow noodles. Return to boil
And simmer about 10 minutes. Add kidney beans and cook 5 minutes.
