Spaghetti Squash

1 Spaghetti squash
Sundried tomatoes in olive oil, chopped
Spinach, chopped
 
Cut squash in half-lengthwise and steam until tender. Scrape the squash out with a fork and place into a frying pan. Add desired amount of sundried tomatoes with about 1 TBSP of the olive oil. Saute squash and tomatoes until hot. Add chopped spinach; cook for 1 minute or until wilted. Add salt and pepper to taste.
