Sausage and Greens Soup

8 oz. Kielbasa sausage or your favorite sausage cut into π inch half moons ( I use the low fat kielbasa)
2 tsp. Olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/3 cup flour
π tsp. Dried thyme
8 oz. Red potatoes, cut into 8 pieces each
6 cups, low sodium chicken broth

1/2 tsp. Kosher salt

4 cups collard greens, cut into 2-inch pieces
1/2 cup whole milk

In a large pot, over medium heat, cook kielbasa in 1 tsp. Olive oil
Until browned, about 5 minutes. Remove kielbasa from pan. In pan,
Add onion, garlic and rest of oil. Cook and stir until onion is
Translucent, about 4 min. Stir in flour and thyme. Add kielbasa,
Broth and salt. Cook and stir until it begins to boil. Add potatoes
And cook until they are tender; about 30 minutes. Add greens and
Cook until tender, about 15 minutes. Stir in milk.

Makes 8 cups, about 190 calories.
