A note on cheese: Get your cheese from the deli to control how much you get...no need for tempting leftovers. Also, ask the deli person to cut it thin!!!! This will significantly reduce how much cheese you use and intake
Basil
Salt and pepper
Clean mushroom with a damp paper towl. Preheat oven to 350. Spray a baking pan with Pam to keep mushrooms from sticking to pan. Slice tomato and chop basil. Place one slice of tomato or enough to cover on portobello, cap down. Season with salt and pepper. Cook in oven for about 10-15 minutes. Remove from the oven an add slice of cheese. Cook until melted. Remove from heat and add chopped basil. Slice like a pizza and serve; as a tapas or with salad.
