Penne Pasta and Vodka Sauce

Ingredients
Whole wheat penne pasta
Tomato sauce (homemade or out of a jar)         
            
Heat onions and garlic, add 1 can crushed tomatoes, add oregano, salt, and pepper.
Fat-free ricotta cheese
Red peppers
Zucchini
Mushrooms
Onions

Directions
Cook whole wheat penne in a large pot. Meanwhile, cook veggies and sauce. Add about 1 ∏ TBSP. olive oil to a sauce pan. Add vegetables and cook until tender, about 8 minutes. Add tomato sauce, cook until hot. Add ricotta cheese and blend. Add penne pasta and serve.
