Greg's World Famous Bean Salad
This bean salad is so flexible! You can eat it plain; or eat it with a few tortilla chips (homemade ovenbaked are even better!); you can chop up some lettuce and put a cup of the bean mixture on it; or serve it as a salsa on a baked chicken breast or fish.
3 cans black beans
1 can corn
1/2 sweet onion
1 red or orange pepper
1 green pepper
handful of chopped fresh cilantro
olive oil
balsamic vinegar
salt and pepper
other options:
cucumber
tomato
zucchini
black olives
Rinse beans and put in large bowl. Add drained corn. Cut up all vegetables into tiny pieces, add to bowl. Add a couple of tablespoons of olive oil and vinegar, salt and pepper to your taste.
Great party dish! Or leave it in the fridge and eat from it all week!
