Garden-style Turkey Meatloaf
1 ½ lbs. Lean ground turkey 
1  10 oz. Package frozen chopped spinach, thawed and drained or ½ cup finely chopped green or red pepper
1 cup quick oats
½ cup finely chopped onion
½ cup shredded carrots
2 egg whites or I egg, slightly beaten
1/3 cup skim milk
1 ½ tsp. Italian seasoning
½ tsp. Salt, optional
¼ tsp. Black pepper

Combine all ingredients in large bowl; mix lightly. Shape meatloaf mixture into a 9X5 loaf pan. Bake at 350 degrees 
For about 1 hour. Let stand 5 minutes before slicing.
Nutrition information: 1/8 of turkey meatloaf is 150 calories.

I have made this meatloaf many times. It is very healthy but tastes good, too. I really like to use the leftovers to make sandwiches. I put a little non-fat mayo on it with some lettuce and tomato. Don’t forget to use healthy whole wheat bread.
