Fish Tacos and Avacado Mango Salsa

Ingredients
White fish (rockfish, monkfish, red snapper, halibut, etc...)
Lime
Salt
Olive oil
 
Lettuce, shredded
Cilantro
Taco shells; optional (If you want, you could just serve all the ingredients over a bed of lettuce:))
 
mango; peeled, seeded, and diced
red pepper; seeded and diced
1/2 red onion; diced
1 avacado, diced
salt
1 TBSP lime
3/4 TBSP sugar
1 TBSP white wine vinegar
1/2 TBSP canola oil
pinch of kosher salt
 
Directions
Place fish onto a greased baking pan, lightly coat with olive oil, a squeeze of lime and a pinch of kosher salt. Bake for about 15-20 minutes at 350 (depending on the thickness of the fish). Shred fish into small pieces.
 
Meanwhile, make mango salsa by combining and mixing all the ingredients together. Chop lettuce and cilantro and set aside to make tacos.
 
Put a bed of lettuce on the plate and then create tacos by filling it with fish, lettuce, cilantro and mango salsa. Sqeeze lime over the whole creation as an added dressing to the lettuce and things that fall out of the tacos:)
