Chicken Salad
2 chicken breasts
1/3 cup red onion, chopped small
1 stalk celery, chopped small
1 1/2 TBSP. mayo (reduced fat or fat-free)
Salt and pepper
Boil chicken breasts in water for about 10 minutes. Take the chicken out and chop into cubes or small pieces. I shred my chicken by cutting against the grain. Place chicken in a bowl. Add onion and celery. Add mayo, salt, and pepper. Mix and refrigerate just to get cold.
*I add curry to my chicken salad...mmmm...
