Arroz Con Pollo

Chicken breasts
3 cloves garlic, finely chopped
2 Tbsp. vinegar (doesn't matter which kind)
2 Tbsp. oregano (or any other italian spice)

2 small turkey sausages (optional)
2 med. onions, chopped
1 red pepper, seeded and sliced
3 cloves garlic, coarsely chopped
2 tsp. cumin (or another spicy substitute)
2 tsp. oregano
1 1/2 tsp. smoked paprika
2 Turkish bay leaves
1 tomato, chopped
1 light beer (optional)
1 1/2 cups. chicken broth
2 cups brown rice

Marinate chicken in garlic, vinegar, and oregano for 1-2 hours. Take the sausage out of the casing so it cooks like ground beef. Cook sausage, onions, garlic and red pepper for about 5 minutes. Add spices and chicken. Cook at medium heat for 8 minutes. Add tomatoes, rice, beer, and broth. Bring it to a boil then cover and turn down to low. Simmer for 30 minutes or until rice is cooked and most of the liquid and is soaked up.
This dish goes great with a small side salad or sautéed/grilled pineapple.
