Spinach and Artichoke Calzones

1 bag fresh spinach
1 8 oz. can of artichokes, drained and chopped
1 cup fat-free ricotta cheese
1/4 cup low-fat mozzarella cheese
Jar of tomato sauce
1 cup mushrooms, chopped
1/2 cup onions, chopped
turkey sausage, 3 links chopped (optional)
phyllo dough
 
In a medium bowl, combine spinach, mozzarella, ricotta, and artichokes. In a sauce pan, heat onion and mushrooms until tender, about 5 minutes. Add bowl ingredients to sauce pan. Stir and turn off heat. Following directions on the phyllo box, lay out 3 sheets of phyllo dough, coating each lightly with baking spray (PAM). Place a sizable portion of filling in the middle of the sheets. Fold sheets into a pretty and sealed shape, using more baking spray to seal everything down. Place calzones on a baking sheet and bake at 350 for 20 minutes or until nicely browned. Meanwhile, heat tomato sauce in a sauce pan. Remove calzone and serve sauce on the side.

ps. I just watched this guy on the food network use phyllo dough! He made it so much easier. Just put all the filling in the middle of the phyllo dough, then roll and seal, making it more like a stromboli!!!
