Low-fat Strawberry and Ruhbarb Muffins
1 cup brown sugar
3 1/2 TSBP. oil
1 egg
2 tsp. vanilla
1 cup diced rhubarb
1 cup buttermilk
1/2 cup chopped walnuts
1 cup strawberries, sliced
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ginger
1/2 tsp. cinnamon
Combine first set of ingredients into a large bowl and mix with a spoon until combine. Combine second set of ingredients in a small bowl and then combine with the larger bowl. Pour batter into muffin tins and bake at 350 for 15 minutes.
